Sautéed Soft Shell Crabs

INGREDIENTS

  • 4 soft shell crabs, (cleaned)

  • 1 cup low fat milk

  • 1/2 cup all purpose flour

  • 1/4 teaspoon paprika

  • 4 tablespoons butter

  • Salt & pepper to taste

PREPARATION

  • Soak crabs in milk for 30 minutes,

  • Combine flour, paprika, salt & pepper in a bag and shake well

  • Remove crabs from milk and pat dry

  • Shake crabs in bag one at a time in seasoned flour, remove any excess

  • Melt 2 tablespoons of butter in a large non-stick fry pan.

  • Cook 2 crabs, med high heat, 4 to 5 min per side, until crispy

  • Drain on paper towels.

  • Repeat process for next 2 crabs.
